Butterscotch Banana Bread

This moist Butterscotch Banana Bread is loaded with bananas and butterscotch morsels!


  • 3 medium bananas, mashed
  • 1 large egg
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 3/4 cup packed brown sugar
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 cup butterscotch chips



  • Preheat oven to 350 degress and grease a 9x5 inch baking pan.
  • Place bananas, egg, oil, brown sugar, and vanilla in a large bowl. Use an electric mixer and mix until blended.
  • In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  • Add flour mixture to banana mixture and stir just until combined.
  • Stir in butterscotch chips. Transfer batter to prepared pan. Bake for 45 to 50 minutes.
